Nourish section from Tastemade (I believe you all know their video recipes) is a constant inspiration for me (but not the only one). It’s one of their videos that has inspired me to make this recipe. I have modified it and added a few ingredients, and so it resulted these super yummy yams spinach fritters. I could say this is an improved recipe, gluten and grain free, but not vegetarian, or vegan, sorry guys.
I admit, I was a bit reserved from making such kind of fitters, just because I’ve had previous attempts of gluten&grain free fritters recipes, and they didn’t turn well; the egg and whatever liquid was in there, were separating and kinda scattered in the pan. It wasn’t the situation this time; and I’ve already made this recipe a few times, and they turned out very well each time. And the smell in the house! Oh boy! Enjoy!
Yummy Yams Spinach Fritters
Wonderful greens and sweet potatoes easy and fast to make fritters.
- 2/3 cup yams/sweet potato coarsley shredded
- 1/8 cup scallions chopped
- 1 cup spinach chopped
- 2 tbsp chicken leftovers (from soup) finely chopped
- 1/4 cup almond flour
- 1 egg free-range
- 1 tsp rosemary finely chopped
- 1/8 tsp pepper or to taste
- 1/4 tsp salt or to taste (optional)
Add all the ingredients one at a time into a bowl and mix well.
Heat a non stick pan, and spray or pour a little bit of oil or lard.
Using a measure cup take equal amounts from the mixture and pour them into the pan.
Cook until golden brown on each side, flipping them carefuly.
Remove to a plate and serv them with sourcream (optional), when slightly cooled.
You can skip the salt and they are perfect for BLW or as finger food under 1 year babies. Always adjust seasoning to your taste!
