Here’s another easy fast soup to make when in a big rush and you just realize you’ve got nothing for lunch. This is probably the fastest, and the easiest recipe, yet very tasty. There’s not much to say about it, except the fact that this is a white creamy soup, and my girls prefer creamy soups, and I like them too. Also I love the fact that even though the list of ingredients is very short, this cauliflower soup turns out to be really really good.
We mostly consume sourdough bread that I cook on my own, and this time I had this wonderful turmeric bread on hand, that went together so well with the soup. I also recommend any sourdough goodies just because they are much healthier and in this case the croutons keep their shape much better. Enjoy!
Snow White Cauliflower Soup
The fastest and easiest cauliflower creamy soup
- 4 cups water
- 3 cups cauliflower florets
- 1 potato cubed
- 1 small white onion cubed
- 1 tbsp salt (to taste)
- 1/2 cup whole milk
- 1/2 tbsp ghee
- 1/4 cup parsley chopped
- croutons (sourdough) optional
Pour water in a pot and bring it to a boil.
Add all the ingredients, except for parsley and milk (and croutons).
Let vegetables simmer over medium-low heat until tender.
When done blend them adding ghee and milk to desired consistency.
Garnish with parsley and serve with croutons (optional).
