This is what I usually cook every Saturday morning (but not only then) for the whole family; waffles, any kind. We looooove waffles in the morning! And we loved these golden pumpkin waffles too. Looking for a way to introduce this fruit (by the way, I didn’t know for sure if it’s a fruit or a vegetable, but it seems it is a fruit indeed) to my girls, since they didn’t like it on it’s own (sliced and baked) as I used to eat it most of my life until recently, I thought I should try to add the pumpkin puree to my waffles recipe. They came out so wonderful!
When searching for easy recipes for kids, I believe the ones for breakfast and dinner are the hardest to find and make kids really enjoy them, but also making sure they are healthy and nutritious too. Plus I am always looking for diversity, because we get bored sometimes too, right? So why wouldn’t they? I believe this recipe is another one to add to the family’s recipes book because it is all worth it. Everyone will enjoy it and it’s just great when we can all eat the same dish, together, from the youngest to the oldest.
Golden Pumpkin Waffles
Perfect waffles for the fall and winter season
- 1 cup all purpose flour unbleached, organic
- 1 tsp baking powder
- 1 tsp ground cinnamon or pumpkin pie spices
- 1/4 tsp salt
- 1/2 cup pumpkin puree organic
- 2/3 cup milk adjust if necessary
- 1 egg free-range
- 1 1/2 tbsp coconut oil
- 1 1/2 tbsp pure maple syrup or honey or agave
Combine dry ingredients in a bowl; whisk.
Combine wet ingredients in a separate bowl; whisk.
Add the wet ingredients to the other bowl and whisk together but don't over do it.
Cook using a waffle pan or device.
Serve with whipped cream or creme fraiche and your favourite jam.
We love to serve them with natural whipped cream and orange jam.
