Fudgy Balls With Surprise

The main surprise is in how unexpectedly delicious these were, but the other that I thought of when wrote that in the title is the piece of chocolate in the middle. Don’t know about you, but when I was a child I loved loved loved candies with something different in their core, either it was jam, or a type of nut, or raisin, or othen cream, it simply was a surprise for me. I’ve decided to call them fudgy balls because when you take a bite the feeling is quite¬†similar.

They were soooo good that they simply vanished from the plate. Obviously, I had to make them again. The good thing is that they are a healthier treat for both parent and child, and the little one can help too. You can go for other nuts instead of cashews and it might work with other driedfruits as well. Just play around; it will be fun!

Fudgy Balls With Surprise (Vegan)

A healthier, no-guilt option for fudgy chocolate candies

Ingredients

  • 1 cup raw cashews
  • 1 cup dates pitted
  • 2 tbsp extra virgin coconut oil
  • 1/2 tsp organic orange zest (optional)
  • 1/4 cup rice milk chocolate or dark
  • 1/3 cup 70% dark chocolate chopped and melted
  • 1/2 tsp ground cinnamon for dusting
  • 1 tbsp honey (optional)

Instructions

  1. Melt the dark chocolate and add 1 tbsp of extra virgin coconut oil; stir and set aside

  2. Using a medium food processor, blend together dates and cashews

  3. Add the coconut oil and orange zest and process a little bit more, until mixture holds together (add the honey if necessary)

  4. Spoon it out into a bowl and form balls adding a half of a piece from the rice milk chocolate in the middle 

  5. Roll it through your hands and cover it with the melted chocolate using a spoon

  6. Right after this put each ball on a plate kept in the refrigerator the whole time

  7. Dust each chocolate ball with a bit of cinnamon

  8. You can serve over at least half an hour
