Popcorn is a snack we don’t often consume in our family, but at times, girls ask for it. Once we were in a park downtown and we bought some caramel popcorn (it was the first time for my big one) just to try it since she insisted. I can’t say it wasn’t tasty, just that it was loaded with sugar and I really had a nasty way-too-sweet feeling left in my mouth and I hated that. So I’ve decided I will only eat caramel popcorn again, if I make it myself in a better way somehow. This Better Caramel Popcorn (oh, so much better indeed!) it came out so good, it simply vanished in a few minutes, obviously!
If you choose to use ghee instead of regular butter, you should expect a slightly different flavor, but it is worth trying. What I love about this version, is that you can definitely feel the caramel, but you won’t feel sick after eating as much as you desire, and that’s also great for the kids. The honey does a great job while making the caramel, but I believe you can replace it with maple syrup if you prefer.
Better Caramel Popcorn
This Caramel Popcorn made with homemade honey-muscovado sugar caramel will surely delight everyone in the house.
- 3 cups plain popcorn home-made
- 2 tbsp light muscovado sugar
- 1 tbsp honey
- 1/2 tbsp ghee or grass-fed butter
- 1 pinch salt
Make the popcorn in a deep pan, covered with a lid by shaking it until all the corn kernels pop. Transfer to a bowl.
Add the rest of the ingredients to the pan, and let them melt together stirring constantly.
Put the popcorn back into the pan and do your best to coat it with the caramel.
Let everything cool down and then break it as desired and serve.
